Recipe of the month

Sticky Ginger Cake





Oven Temperature: 130oC

8oz margarine                       

8oz soft brown sugar

8oz golden syrup

12 oz plain flour

2 tablespoons ground
ginger

2 teaspoons cinnamon

2 teaspooons bicarbonate of soda

½ pint milk

Baking tin lined with parchment

 

  

Method

 

  1. Melt fat, sugar and syrup and leave to cool
    slightly
  2. Sift the flour, ginger and cinnamon into a bowl
  3. Stir in the melted fat etc to the flour and mix
    till smooth
  4. Warm the milk to blood hot, add the bicarbonate
    of soda and stir into the mixture
  5. Pour into tin and bake for 45mins – 1hr till
    firm to touch.
  6. Leave to cool and if wanted cut into pieces and
    decorate with water icing an crystallised ginger
